Curry Eggs


Servings: 6

This is a great meatless dish that is high in protein and very satisfying.

It takes a shortcut by using store bought organic marinara sauce but you can also make your own.

2 Tablespoons Coconut Oil 1 Onion, Thinly Sliced

3 Cups (24 ounces) Organic Crushed Tomatoes or Homemade Marinara Sauce 1 Tablespoon Curry Powder

4 Cloves Garlic, Minced

2 Tablespoons Fresh Ginger, Peeled and Minced or Microplaned 8 Hard Boiled Eggs

Salt And Pepper to Taste

Heat oil in a large skillet over meduim-high heat. Add onion, garlic, and ginger. Season with salt and pepper to taste; cook, stirring occasionally until onion begins to soften (4-5 minutes). Add curry powder and cook while stirring about 30 seconds. Add marinara sauce and eggs; cook just to heat through (2-3 minutes), stirring gently to avoid breaking up eggs.
