Banana Bread

Gluten and Sugar Free



Adapted from Dr. Axe

Ingredients

· 4 organic eggs

· 3 medium overly ripe bananas, mashed

· ¼ cup organic coconut milk

· 1 tablespoon pure vanilla extract

· 2 teaspoons baking soda

· 2 ¼ cups almond flour

· ¼ cup xylitol

· ½ teaspoon sea salt

· ½ teaspoon cinnamon

· ¼ teaspoon nutmeg

Directions

1. Preheat oven to 350 degrees F.

2. In a bowl, mix eggs, banana, coconut milk and vanilla.

3. In a separate bowl, combine the remaining ingredients.

4. Combine both mixtures and stir until well incorporated.

5. Line a glass loaf dish with unbleached parchment paper and pour in the batter.

6. Bake for 45-55 minutes. Check with toothpick for doneness.

Serves 6-8
