Almond Cookies


Servings: about 15 cookies

This is a quick, tasty treat with no flour making it advanced plan approved.

1⁄2 Teaspoon Baking Soda 1 Teaspoon Vanilla Extract 1⁄8-1⁄4 Cup Xylitol

1 Cup Almond Meal 1 Egg

1⁄2 Teaspoon Grated Lemon Peel


Preheat oven to 350ºF and grease cookie sheet with grapeseed oil. Stir together almond meal, Xylitol and baking soda In a medium bowl. Add beaten egg and vanilla extract and mix well. Shape dough into balls one inch apart on cookie sheet. Bake until puffed and golden, about 10 minutes. Cool cookies on baking sheet about 2 minutes before transferring to a rack or waxed paper to cool.

TIP: For another variation, drizzle with melted unsweetened chocolate with stevia or Xylitol added to taste.
