Italian Vinaigrette

Nothing beats a great Italian dressing. You can make this one right before you sit down to eat without a lot of fuss.

1⁄4 Cup Red Wine Vinegar 1 Teaspoon Grated Onion 2 Garlic Cloves, Minced

1 Teaspoon Dijon Mustard

1 Tablespoons Chopped Fresh Oregano or 1 Teaspoons Dried Oregano

3⁄4 Cup Extra-Virgin Olive Oil

Sea Salt and Freshly Ground Black Pepper to Taste

Combine the vinegar, garlic, mustard, and oregano in a small bowl. Add the olive oil in a slow, steady stream while whisking constantly until all the oil is incorporated. Season with salt and pepper to taste


TIP: You can adjust the flavours of any dressing according to your taste. Just experiment with the quantities and/or substitute spices.

TIP: Refrigerate in an airtight container until ready to use or up to 1 week.
