Servings: 1 Pizza Crust
This is a great substitute for regular pizza crust. It makes a nice crispy crust rather than a soft doughy one. Use it in place of crackers as well.
1 Tablespoon Gluten Free Dry Yeast 11⁄2 Cups Almond Flour
1 Cup Garbanzo Bean Flour
2 Tablespoons Dry Milk Powder 2 Teaspoons Xanthan Gum
1⁄2 Teaspoon Sea Salt
1 Teaspoon Unflavored Gelatin Powder 1 Teaspoon Italian Herb Seasoning
2⁄3 Cup Warm Water 1 Teaspoon Olive Oil
1 Teaspoon Organic Apple Cider Vinegar Grapeseed Oil
Preheat oven to 425ºF. In a medium bowl, mix the yeast, flours, dry milk powder, xanthan gum, salt, gelatin powder, and Italian herb seasoning. Use an electric mixer on low speed to blend dry ingredients. Add warm water, olive oil, and vinegar. Mix on high for three minutes. The dough will be very sticky.
Coat or spray a pan with grapeseed oil. Place the dough on the pan. Sprinkle some bean flour on the dough to help press it evenly into the pan. (12” round or 9” x 13”) Bake for 10 minutes. Remove the pizza crust from the oven and cut into pieces to eat or top with your favorite sauce and toppings. Bake for an additional 15-20 minutes.
